Strawberry Bread

    Step1

    Preheat oven to 350 degrees and grease a 9 inch X 5 inch loaf pan with cooking spray. Place parchment paper in loaf pan so the bread will easily be lifted from the pan.

    Cut strawberries into 1/2 inch pieces.

    Step3

    In a medium bowl combine 3/4 cup vegetable oil and 2 eggs.

    In a large bowl combine 1 1/2 cups flour, 1 cup sugar, 1 1/2 teaspoons of ground cinnamon, 1/2 teaspoon baking soda, 1/2 teaspoon salt and 1/2 cup chopped pecans.

    Step5

    Pour oil and egg mixture into flour mixture and stir.

    Step6

    Add strawberries and mix.

    Step7

    Pour mixture into prepared loaf pan. Bake at 350 for an hour or until a toothpick inserted comes out clean.

    Step8

    Allow to cool before icing.

    Step9

    While bread is cooling make icing. Add 1/4 cup confectioners sugar to a small bowl and 1 1/2 teaspoons of cold milk and mix.

    Step10

    Once bread is cool, gently remove from loaf pan.

    Drizzle icing over the top of the bread. Allow icing to set.

    Step12

    Slice bread and serve.
